Is it too late to say happy new year? Happy new year munchkins! It’s been way too long since I posted here , where does time go? but you know, this thing called life happens to you. I talk about this on my Insta stories and Snapchat, you can follow me there. I love food and everything that involves food and I missed writing about it so much, so i’m back! and much more organized. I thought I would start with a recipe that I absolutely indulge in all year round which is this simple corn pilau. I love that it’s quite easy to cook and it takes a short time. I also love the fact that it uses ingredients that I almost always have fast access to. This dish is super tasty and the corn is always a sweet surprise in your mouth. I ate this with fresh salad and oh! the joy in my mouth. Let me know if you try out this recipe.

Heat: cooking oil over medium- high heat and add in the onions.
Fry: the onions until golden brown.
Mix in: finely chopped garlic cloves, pilau masala, coriander and stir.
Add: tomato paste and mix.
Add: corn and chilli and let it cook for 2 minutes.
Pour in: water and bring to boil.
Add: salt to taste.
Add: rice and let it simmer.
If you have a rice cooker, pour in the mix to the rice cooker at this point and let it cook.
Serve and enjoy!
