FLUFFY RED VELVET PANCAKES (From scratch)

Sometimes we are so engulfed in our day to day eating habits that we do not recognize the need to switch it up a little. That was me a while ago. I would just make the same breakfast, lunch and dinner, week in, week out. But it is until we try something different that we learn what we have been missing and just how oh so good it is! That is what led me to make these fluffy red velvet pancakes. Just a little twist to my regular pancakes and it made all the difference. It wasn’t until I sunk my teeth into these fluffy pancakes that I realized I had been missing out on some tasty goodness! If you are a fan of the red velvet cake, then you’ll also love these. You can also make these pancakes from the red velvet cake mix found in supermarkets but I opted to start from scratch because, why not? Lol! I also replaced butter milk with milk and vinegar, so if you are a frequent  or an avid user of buttermilk, you can replace the milk and vinegar on this recipe with that. Let me know when you try out this recipe.

INGREDIENTS


 Red velvet pancakes ingredients

PREPARATION


Add: Flour, cocoa powder, baking powder, baking soda and salt to a bowl, mix and set aside

Into a large mixing bowl: Add milk, and vinegar and wait for 2 minutes

Whisk in: eggs, melted butter, sugar, vanilla essence and red food coloring

Whisk: mixture until well combined.

Slowly add in: dry ingredients while whisking and mix just until combined.

Cook: until you see bubbles start to appear at the top, flip the pancake and cook the opposite side until the pancake has cooked through.

Serve with whipping cream, syrup, glaze, fruits or all and enjoy!
